Hoa chuối hay còn gọi là bắp chuối, nó giòn giòn được trộn cùng với thịt gà và đậu phộng bùi bùi, dùng làm món ăn chống ngấy lại thêm phần đưa đẩy trong bữa cơm.
Thịt gà rửa sạch, cho vào nồi, thêm nước lạnh và nửa muỗng cà phê muối, đun sôi khoảng 15 - 20 phút thì tắt bếp, đậy kín nắp nồi để thịt gà tiếp tục chín.
Bắp chuối tách bỏ bớt phần già, cắt mỏng, ngâm bắp chuối vào âu nước lạnh có pha một ít giấm hoặc chanh để bắp chuối không bị thâm đen. Húng quế rửa sạch, cắt nhỏ.
Hòa tan hai muỗng canh đường và hai muỗng canh nước mắm trong chén, hòa cho đường tan, trộn tỏi, ớt và vắt vào vài giọt chanh hoặc giấm. Đậu phộng rang chín, giã thô.
Thịt gà dùng tay sạch xé nhỏ, trộn bắp chuối, thịt gà thêm chén nước mắm vào âu sạch, nêm nếm lại tùy theo khẩu vị.
Khi dùng gắp bắp chuối, thịt gà ra đĩa, bên trên rắc đậu phộng rang và rau húng quế lên bề mặt, có thể dùng kèm với cơm hoặc bánh phồng tôm.
